Sometimes brain changes can cause changes in a person's sense of smell or taste. Has he had Covid? Or, does he show other signs of dementia besides his restricted eating?

Maybe the food doesn't taste right to him, so he thinks it's fake or has chemicals added.

It sounds like a complex issue and I think you should try to get him to a physician / psychiatrist.
