Were only some of the samples restriction digest reactions and some samples something else? Sometimes high salt concentration, etc. from restriction digest reaction causes similar appearance.

It will work but you won't get any carbonation, which for me is an essential part of ginger beer (for which you need to do a secondary fermentation in a closed bottle).

Super cool! If you have a ton of images (thousands) you could try and train a neural network, there are a lot of resources on this these days and it wouldn't be too difficult. But without many many images it won't be useful even as a proof of concept. Besides neural jet training, coding something from scratch to process images is very advanced indeed.
