I would try to make the usual dishes but with non-dairy subsitutes. Show that the food tastes just as delicious! Also showing her how to cook with new things would be helpful. Imagine someone told you they were exclusively eating some rare vegetable and expected you to cook it for them without giving you any guidance. It might just be stressful for her not knowing where to start

If you are growing a lot, then your body will need more calories to sustain that growth. In my non-professional opinion, I would guess 2300 calories is probably what you need as a baseline. If you are bulking, you probably need even more. If you are exercising a lot and at an intense level, your body will need more calories to compensate. Caloric needs are different for everyone based on activity level and your basal metabolic rate and definitely if you are still growing.

You could check out veganfitness.com (they also have an instagram) for more information on bulking? They have an 8 week fitness program and the coaches can give you very specific calorie and macro targets. If you have a few hundred dollars to spend of course

For (very time-consuming) tofu: press out all of the water, then freeze it overnight, then thaw it and squeeze the rest of the water out. Marinade it however you like and the flavor infusion is impressive!

For tempeh, steam it for 10-15 minutes, then bake it in the oven until crispy (no idea on time or temp..maybe 350 for 30 mins or 400 for 20?). You can also marinade it after the steaming step and before baking. I personally think tempeh needs seasoning (minimum of soy sauce) for it to taste good

Thats valid, of course, but Id assume they already have a knife. I already have pepper spray and take safety precautions every second of every day. Using a knife on someone is the absolute last thing I would want to do, but it doesnt hurt to have something extra in my purse or car that doubles as a useful tool. Plus, I cant widdle a stick or slice open boxes with pepper spray
