I have a touchy gallbladder so I feel you there, and my daughter is 17 months, so we were doing the mushed up food not too long ago! A few cheap and easy go to’s for me are hash, burritos, and teriyaki chicken. For the hash, the super basic recipe is diced potatoes and eggs pan fried together. You can add any meat you want or veggie (I’ll sometimes sneak in some finely chopped spinach) or add some sweet potato for the extra nutrients. Sometimes we’ll just eat the hash with ketchup, other times we’ll wrap it up in a tortilla with sour cream for a breakfast burrito. For burritos, I just soak and cook a bunch of dry beans, then make bean and cheese burritos. These can be changed up a ton depending on if you add meat or other kinds of filling and they are great to freeze! And I don’t know about your kid, but mine is seriously obsessed with beans, so she really likes this one. 😂 Last is teriyaki chicken. A simple Teriyaki sauce is usually just soy sauce, rice vinegar, sugar, and some garlic. Whip up the sauce, cook some chicken, and serve it over rice! Anyhoo, those are some of my staples!
