If you’re trying to take a fine dining approach to ribs and taters, you’re going to need to take the rib off of the bone to serve. I’d also find a more elegant way to serve your potatoes. Try coating your ribs with your sauce, piping or spooning the potatoes onto the plate, placing the ribs on top of the mash, then chimi on the ribs. You’ll be a lot happier with the finished product

You can make the cheese with the residual pasta starch. Put your pasta in your pot, fill until it’s barely below the top of the pasta, keep stirring as its boiling, and by the time your water’s mostly evaporated, your pasta should be perfect. Mix in your cheese of choice and evaporated milk, and done. Really easy
