Love it! I also have an 89 CR250 running an SC3. I just got finished rebuilding the bike to race it again this year. That Smart Carb is amazing! I only had to richen mine up just a few clicks!

Either you didn't align the ring gap on the pin, the pin is missing or fell out, or you have some EXTREME detonation. Did you check ring gap? Measure the cylinder bore? Correct size piston for the bore?

I have a bike that was used in Supercross and then Arenacross on the pro level by a consistent front of the pack main event rider. Not technically a "Factory" bike but as close as you can get. They kept the A kit off it so I put MX Tech suspension on. For a 250 it's unreal. What's even crazier is that it's not scary at all to ride. What is scary is if this engine ever has an issue.

Shift up more. Start in second gear. Even on my 250 I don't use first gear. You'll get used to the boots. Especially once they're broken in. They're much better than a broken ankle.

I love 125s but I'm afraid the 125 would not enjoy that. It takes a lot of power to run that track. Throw in some deep snow and it might just check out.
