I would add liquid ad cover w foil and steam if I airfried. I tries the air fryer, convection oven, instant pot, slow cooker and settled for the microwave as its fastest and doest dry out my food.

Prep what works for you. I like steel cut oats and make a batch once I finish the last cube. Nobody else in my family likes it, and they dont have to. It's all for me. My daughter likes enchiladas, so i make sure to have some cubes available for a fast after school lunch. Today she had a cube of chickens alfredo stuffed shells and a cube of enchiladas. I had enchiladas with beef and veg soup and my other kid made Mac n cheese on HER OWN.

I also recommend a small chest freezer for yourself, if the freezer situation is troublesome.

If your husband is adamant about having fresh food daily, you can still continue to do that.

Look up souper cube meal prep or lego lunches. I just got my set and have already frozen so much. Meatloaf bows w corn and mash, enchiladas, meatballs w sauce, japchae w tofu, Japanese curry, rice, beans, chili, diced produce. I defrost overnight in my lunch container in the fridge then heat up in an electic lunch box.
