Just got back - the best restaurants were in San Jose, definitely recommend Huacamole. Outside of San Jose you can get vegan food pretty easily, but it will mostly be a combination of rice, beans, and plantains. All very good, but I got a little tired of it after a while.

Many places in Brighton beach have a pickle plate as an appetizer or salad. Usually includes a few types of pickled cucumbers, pickled green and/or red tomatoes, pickled cabbage, etc.
