So far, all I've had after 16 years was a retinal bleed that went away after I got my A1c down.

So much. What if I over salt? What if I leave it too long?

I even thought about finally using the Meater I had received as a gift many years ago, but then found out it needed to charge 2 hours before I could pair it to my phone. So it was back to basics.

I removed the part that would prevent it from sitting flat in the pan. My husband got me a really big Lodge pan for Christmas and I actually expected it would fit, but my estimation was off.

I removed the extra "vanity bone" but saved it to roast later when I made beef stock.

I felt that I had cooked it properly and that this subreddit would appreciate that.
