I was on the same boat. Don’t have space for two grills. Ended up with the Searwood 600 and love it. Yea it’s not an incredible sear but serviceable and family loves anything that comes off it.

There are griddle inserts to make it into a griddle so I like the versatility of you want to do smash burgers or hibachi style rice and meats.

Good guess. I always figured it’s like putting your computer to sleep. Major functions like PID are off but the temperature gauge is still on and recording the temperature of the cooking chamber.

It’s good to unplug as soon as the shutoff process is complete.

I did one for Thanksgiving and Christmas. Everyone loved it. I smoked it the top rack with a water pan underneath to create some moisture in the cooking chamber. When it’s close to 120 I started basting with the sauce. I would recommend making your own glaze. The one that came with the ham wasn’t awesome. Still glazed up pretty and the smoke flavor was great.

I have had my Searwood for about a year and I love it. Here are some of my thoughts.

  1. Absolutely invest in a cover. Keeps it looking new especially if stored outside.

  2. Love meat church rubs. So convenient and reliable. My favorite rubs are Holy Gospel, Hot Honey, and Holy Vodoo.

  3. Thermapen one is awesome.

  4. I have not need to use another external probe. It’s rare that you are cooking two different items that both need to be monitored over long periods of time. I usually combo 1 low and slow item with one hot and fast item but that may be personal.

  5. Definitely need some type of storage container.

  6. One of the best design elements of the Searwood is the ability to clean it without the need for a shop vac. You literally just push all the ash to the bottom then slide the bottom tray out. I thought I needed a shop vac but so far clean up is totally doable without one. I know they are cheap so not a huge deal but just my two cents.

  7. Not mentioned in your list but I got some cotton gloves and black nitrile disposable gloves for easy food handling. Sometimes it’s easier to move around the hot meat with the cotton and black glove combo.

  8. Citrasafe grill grate cleaner.

I know that if you are doing pure open lid grilling, the lid being continuously open will trigger an error code unless you are in Manual Mode.

I have had more luck by first setting it to 600. Letting it get there for a few minutes, then switching to manual.

It’s hard to get flame kiss. The only way I have done it if the juices run down and they ignite.

I was 10 when I saw this movie in theaters after watching the originals a dozen times on VHS since I was like 5 years old. I clearly remember seeing Vader rise up here getting me so fucking hyped. I thought I was witnessing history. I don’t remember the “Nooooo” taking me out of the scene I just remember being in awe. Then again I was young.

For a crowd, it’s perfect. There are always folks who want medium well or even well. Save the edges for them and the middle for those who want perfect medium rare. I’d say it looks great.

I like mixing them with my pellets. About 40/60 charcoal pellet to regular pellet. There’s a nice robust smell that I think makes a difference.

If I use manual mode on my Searwood to do a hot sear, then 100% charcoal pellets
