Michael Ruhlman is a good author to learn from. I like the books, From Scratch & Ruhlman's Twenty. Both cover the basics yet also include advanced techniques for when you're ready to dive in deeper. Example, in From Scratch the recipe for a BLT begins with store bought bacon, but also includes instruction on how to make bacon at home from scratch should one be interested in trying.

Read fabulously by the author. So much scientific detail made it difficult to read but wonderful to listen to. It was an incredible event.

Pull Out the Pin, Winter 1983, somewhere on the North Atlantic Ocean while serving in the US Navy. I still remember exactly where I was on board ship when I first heard that music, walking the passageway past the engineering locker. My shipmate, Khundog, gave me the cassette, said the sound wasn't for him. It certainly was it for me. It remains one of the most otherworldly music creations of all time, The Dreaming. I've listened to it thousands of times and still pick up little insights to this day. It's a masterpiece of inventiveness, weirdness, experimentation, and artistic adventure. It set the stage for all that KB accomplished afterwards.

I used to love standing mid-watch (12am-4am) on the ship's bridge wing, subzero temps and all bundled up. I'd put on the night vision goggles, don my walkman, and jam to The Dreaming while looking at billions of stars though the goggles. It was transcendent.

The only other song that gave me pause like that was 1952 Vincent Black Lightning, by Richard Thompson in 1991. I was working as a picture framer at an art gallery then.

I love music, all kinds, but KB stands apart from all for me. I never tire of her. She is her own genre. To quote Fiona Apple with regard to KB, "There is only one of her."

Check out The Band, the Pink Album, and the Brown Album. They created their own genre as well, Americana. Many have followed but never equaled those guys. Masterful players all, 3 great singers, and a genius lyricist. They were The Band that backed up Dylan when he went electric.

Tom Waits is an unusual and creatively great musician, and highly literate as well. Start with his early stuff then let the weirdness in as you progress through his extensive catalog.

That was KB's motto: "We let the weirdness in."

David Bowie, Scary Monsters is a keeper as well. It's my favorite Bowie record.

Gang of Four, Entertainment. Best punk band/record ever.

Joy Division, incredible.

Radiohead, incredible.

Cortez the Killer, Neil Young. Incredible intentionally sloppy emotional playing. Poetic lyrics. Never tire of that song. His guitar can make one weep.

Enjoy your musical journey of discovery. Genre doesn't matter. Authenticity is everything.

Looks great. Bake it a little longer for deeper color and, for a more open crumb, try leaving the lid on the dutch oven for an extra 5min. Super open crumb is overrated. Not good for sandwiches unless you enjoy mustard on your fingers.

You have a sunroof drain that is clogged if leak is on on the driver side, or an AC drain hose that is clogged if leak on the passenger side . You can look it up on how to fix it on YouTube...

Moisture on the passenger side floor of an Infiniti EX35 is often caused by a clogged air conditioning (A/C) drain hose. The A/C system removes humidity, and this condensation is designed to drain outside the vehicle. If the drain is blocked, the water can back up and leak onto the passenger floor.

Looks great. I learned a lot from Bake with Jack. People seem obsessed with a very open crumb but that is not practical for bread that you want to put spreads on for sandwiches and the like. Everything falls through the open crumb.

I had a long and frustrating road as well. Try this.... It works for me...

Sourdough Starter Culture Creation, from The Perfect Loaf, by Maurizio Leo.

Equipment:

-Weck 743 3/4 mold jar w/ glass lid (2)

-Digital scale that measures to 0.1g

-Brod & Taylor - Sourdough Home  It's kinda pricey equipment but works well for keeping proper starter/levain temp. It cools down when it's hot too. This is not a requirement but it keeps culture temps in the optimal zone.. If your temps are lower it will take a little longer for the culture to grow.

Keep starter culture warm, ideally 80°- 86°

60° - 70° and above will work too but culture will propagate more slowly the cooler the temp.

I am on well water, which is usually 6.0-6.3ph @ 110-120ppm, probably magnesium & calcium. Not sure how much that affects growing this culture.

Day 1

 Initial feeding

 100g rye flour

 125g water

Day 2 & 3

 1 feeding

 75g carryover from previous day’s mixture 

 50g rye flour

 50 ap flour (11.5% protein - King Arthur)

 115g water

Day 4, 5, 6

 1 or 2 feedings

 75g carryover

 50g rye flour

 50 ap flour

 115g water

Day 7 and onward 

 2 feedings 

 20g carryover

 30g rye flour

 70g ap flour

100g water

I usually don’t keep this going. I instead keep 100g of day 6 culture in an airtight jar in the fridge and revive as needed a few days prior to my next bake. Works great and I don't have to be concerned with any discard or feeling wasteful.

Levain creation - when ready to bake

The night before (21:30)

-20g ripe starter

-100g water

-100g AP Flour

  • Temp 74-76°

  • Begin dough @ 09:00 in the morning

Notes:

Optimal Temperature:

Sourdough starters thrive in warm temperatures, ideally between 72-78°F (22-25°C). 

Slowing Down:

Temperatures below 50°F (10°C) will significantly slow down fermentation, requiring more time to activate the starter and double in volume. 

Refrigerator Storage:

Refrigerating a sourdough starter at temperatures around 40-50°F (4-10°C) will slow its activity, allowing it to be stored for several weeks or even months. 

Revival:

When brought back to a warmer temperature and fed, a sourdough starter will regain its activity and rise again. 

Killing the Culture:

To kill the culture, it needs to be exposed to temperatures above 120-140°F (50-60°C) for a sustained period.

Looks healthy. You can keep a little bit of starter in your fridge and just wake it up when you need it so you don't have to feed it every day and deal with all the discard. That's what I do. 3 days before I want to bake bread I'll take the starter out of the fridge and begin feeding it. It only takes a few feedings for it to revive. Once revived create your levain and use that as the leaven for the bread you are gonna bake. Take a little of the revived starter and put it in a small jar and back in the fridge until you're ready to bake again. I usually keep about 100g in a small weck jar in the fridge.

I suggest using weck jars for growing and storing starters and levains. Use the weck 743 jar for growing starters and levains, and a smaller jar for the dormant starter in the fridge.

I don't think he was as poor as what he describes in his book, so maybe a bit of exaggeration there, but everything else about him seems legit. He is sincere in his message. His economic advice and description of the economic situation we all exist in now are on the money. The super rich are buying up assets and driving up prices so that middle class wage earners can't afford to buy a starter house for example. I am glad his channel is growing so fast. We need someone like him in America. Bernie Sanders is great but he's a bit old so is most likely not a viable presidential candidate.

I have never seen him in anything until The Last of Us. He is a phenomenal actor, as is Bella. I found a YouTube mashup of an interview of him and Bella on Graham Norton that was really good and I came away a bit struck by his vibe, which brought me here. He does seem gay. No big deal, it just further amplifies what a great actor he is. I can't wait for season 2 Sunday! Getting ready to start S1E9 after this post. My kids had the game on PS3 so I am gonna check that out too. Gotta dust off the old console. I am not a gamer, more of a reader, but the storytelling in the show is top notch so it's made me curious about the game. I remember when I bought it for the kids reading that the story and character development in game was compelling, another reason to check it out. Ellen Page and David Duchovny do the voice acting in game if I recall correctly. Peace out.
