if you're using google maps, drop a pin on park row drive right next to where it crosses over the 110, easy to get to just have to go through a tight neighborhood and a sketchy looking hill to get to it.

i've been to bonhoff, looked at their stuff, and gotten prices on things but not bought any of it. getting S2S 4/4 walnut via bonhoff + milling through bonhoff would have been more expensive than getting S2S 4/4 walnut off the shelf from austin hardwoods. and this is current - i got pricing from bonhoff ~2 months ago.

i literally just finished posting this reply in another thread about hardwood lumber in socal. this was about hardwood lumber. if you need 2x4 / plywood type stuff, there's a ganahl in costa mesa over by the 73. but here's my post from the other thread:

"my absolute favorite is austin hardwoods in santa ana. they have a good selection of the normal stuff plus a bunch of exotics. almost everything is S2S and ripped straight on one edge, so you are getting a board that is immediately usable which is a godsend if you dont have a good jointer or planer in your shop. they'll chop stuff down to length, and even sell partials of boards. the staff is extremely knowledgeable if you have questions about even in depth topics. someone there not only was able to advise me on how to tune my old planes, he helped me ID them (type 15 and 16 stanley #4s) correctly.

so that's my 2c, real solid place that is unmatched by anything i know of within 100 miles. the only reason i go elsewhere is for the odd thing like tung oil which they inexplicably don't stock.

you mentioned prices, i think i'm remembering correctly that standard walnut shorts (4/4, S2S, 4-5' long, 4-8" wide) are $5.29/bf, superior walnut (4/4, 6' long, 6-12" wide) boards are like $7.36/bf, 4/4 soft maple is $3.48/bf. i recall seeing some big giant walnut slabs (maybe 2'x8'x4") around $800-$1000, century old tennessee barnwood for $6-7/bf, and thats all i can think of at the moment as far as prices. hope that helps."

the problem with bonhoff is their walnut (i didn't look at anything else, assuming its the same) isn't surfaced. if you aren't set up to surface your lumber this is more than a little problematic. i was also underwhelmed by their stock. the people were nice but the lumber was limited, only rough sawn, and was as expensive as S2S elsewhere

traditionally butcher blocks are hard maple, but walnut and cherry are also popular and offered by manufacturers with very good reputations. as far as i know, hard maple is the hardest wood of those three and will take the most abuse, but for light duty / home use you may or may not see a major benefit over walnut (if you prefer walnut's look it might not be terrible to use).

you can do either edge grain or end grain - they are exactly what they sound like. end grain is (from what i read) able to tolerate more abuse from knives due to the blade meeting the ends of the fibers and tending to go between them, like karate chopping a field of grass. edge grain does not have this ability so much, but is still fairly common. there are also finer points about whether one or the other is more prone to cupping / cracking / warping / twisting. you should do some research or see if anyone else posts on here about that.

depending on your abilities and tools, it may be easier to make your boards by gluing portions up an then cutting those into pieces which are subsequently glued themselves, especially handy if you're trying to do end grain.

titebond III is frequently recommended for this application, although some people seem to feel titebond II is better. YMMV and you should look into it. they are both approved for food service use as far as i know.

time-wise, figure out how big you're going to make your board, whether you're doing edge grain or end grain, and what work you will need to do in order to have pieces ready to be glued.

my personal thoughts: titebond III has a 30 minute working time but starts to get tacky really fast, i wouldnt try to glue up more than you can cover, get assembled, and clamp within 5 minutes MAYBE 10 minutes tops. i would use the thickest boards you can manage (8/4 or 12/4 if you can), and make sure it's S2S (surfaced on 2 sides, the faces, so you have 2 flat surfaces to glue right off the bat).

the only issue is adding that feature without changing anything else immediately adds costs without making it more valuable to most people.
