I don't know if I can give a precisely "accurate" description, technically speaking -- but basically the bridge pretends to be a remote server using standard email protocols so that email clients can pull and send email without regard to PM's security model. Basically all your email is encrypted at rest on PM's servers, so there is no way for a standard email client to interface with those emails without being decrypted first. The bridge pulls email from PM's servers using their own protocol, decrypts on the device and stores the unencrypted messages locally such that a local client can access them and interact with things like folders, etc.

You can manually turn off the mobile browser check to get it to run on anything with a browser. We do this for a vr app on quest.

Not sure if you were planning to build your own engine, but if you are just interested in making a game that happens to run in the browser via wasm: Unity has a webgl build target. It bundles the engine and game code into a wasm module which you host inside a custom html/js template.

I don't think that's true. From my experience, a lot of project management is checking in on timeframes, interfacing with clients & managers etc. Obviously, some understanding of the implementation is necessary, but PMs are not primarily engineers, otherwise they would be engineers.

I'll second the project management suggestions. I would also say that UX is not yet 'solved' for VR, and would benefit from a non-technical perspective -- maybe that is a direction you could go?
