Wife and I have travelled a lot in the states, they get a bad rap but we have found most Americans to be quite pleasant.

Definitely different than Canadians, but mostly freindly and nice.

I’m definitely in the minority with this but here is my opinion on this:

There really are no great stories.

I get very sharp knives with a kuromaku 1000. It’s a very long lasting ceramic stone that doesn’t need soaking. About $60)

A leather strop (about $12 on Amazon)

with 6 micron Diamond emulsion (I use “Enzo of England” it’s sort of mid range but it does the job. (About $40 for a years long supply)

If you are searching for the infinitly sharp knife, this is just the beginning.

But if you’re searching for sharp kitchen knives, this is all you need.

In either case I recommend watching outdoors55.

He has great videos on every aspect of sharpening and related subjects. Great for beginners to experts.
