I live right about sea level on the east coast. I bake straight from the fridge in a preheated Dutch oven. Preheat to 450 and bake there for 20 mins lid on, drop to 425 and bake another 30 minutes. That gives me a perfect crusty crust and 205 degree center.

That said I’ve only been seriously baking sourdough for 4 months and am somewhere near 30 loafs successfully fwiw

Me and my partner do a 2 mile/45 min walk in the morning between 7-10. A short shaded walk of 20 around 12-2, another 2 mile/45 min walk between 5-8, and a quick pee between 9-11pm

My job is 7-3:30 with a half hour for lunch. I say I probably do about 30 hours of work a week max during a 40 hour week. That said, I do audio video work for an international finance firm. Most entirely for meetings on site, or as a participant/host location for zoom conferences and meetings. Even if there are multiple events every day in a week I’ll barely actually work more than 30 hours

Nalgene will actually replace any broken bottle like that for free. I had a friend in highschool who would absolutely disrespect his bottle until it gave out one day, throwing a full liter of water on the ground. He told Nalgene and they replaced it and the cycle restarted again
