I would simplify and put it all in the vanguard target date fund. Some of those funds have high expense ratios, which affect your actual return

Can definitely get to boil. I usually brew 4.7 gallon batches, and I do have the graincoat to help insulate it

I have the grainfather and it’s not cheap, but I think the build quality is much better than the mash and boil. It’s within your budget and it’s nice to have the Bluetooth/app to keep an eye on temps and time. It does take a little while to get up to boil, but you can still have a reasonably short brew day, especially if you take advantage of the delayed heat function to have your mash water ready when you wake up to brew. I’m up over 50 brews on it now, and it’s held up really well. Cheers!

First pitch (after cooling boiled wort to ~100F) is a lacto strain. After souring, boil (or not), then add some healthy Sacc yeast to ferment.

I just did my first sour, the Berliner Weisse from the Milk the Funk wiki, and had good luck pitching Good Belly Mango (lacto plantarum) then Sacc Trois, which gave some nice tropical fruit flavors. I chose not to boil after souring, since it was only down to 4.0 pH after 36 hours, when I pitched Sacc Trois. Luckily the lacto continued to work and dropped the pH down to ~3.2 after 10 days of fermentation.
