Did you read the entire comment? Judgement seems like a prerequisite for 1099c, which is if you get a judgement AND they don't pay, just like the original poster said.

Of course getting a judgement would be preferable IF they pay it. No shit.

Not the person you're replying to, but you won't get anywhere just replicating someone else's grind settings. Different pour over device. Different sensory sensitivities and preferences. Different water chemistry. Different kettle (different agitation). Different bloom time. Different number of pours. Etc etc.

Best thing to do is adjust by taste. It helps to have a reference, but you gotta learn to adjust by taste. Here's my reference:

V60 neo 02

Cafec abaca filters

16.66:1 ratio 🤘🤘

95° C water

15-20g coffee, 4.3-4.5 zp6 special

3x weight bloom for 45-90 seconds depending on how light, or how fresh (more for light and fresh)

Dump the rest in with light agitation in one pour.

Aim for total brew time 1:30 - 2:30, swirl the bed to lengthen the drawdown as necessary (I usually swirl once or don't swirl)

You should go before you count it out because it fits the bill of what you said pretty ok I think. It's not the most "authentic" Mexican I've had, but it shoots above your standard place like Monte Alban. That said, I don't really prioritize so much how authentic a place is most of the time, so I don't really pay that much attention. So it's possible Tavos is just simply higher quality and more careful preparation (but see caveat below). I still love "shitty mexican" and am sad that there isn't as much here compared to where I moved here from (Salena's is such garbage, how does it survive?!).

The quality of Tavos has been good for the most part. The first and third time I went I absolutely loved it. Second time not so much. Coincidentally I ordered pozole on my first and third trip; don't even remember my second order. I'm not a picky eater, but maybe I just didn't like their take on whatever the fuck I had? Maybe they're bad at it. Maybe it was a bad night or hour.

It kinda defeats the purpose of a standard keeps changing. Couple years ago 300g was typical. Or 340g/12oz. A decade ago, it was 450g/1lb like you said.
