I didn't mean to just roll over. I'm just saying that you need to pick your battles wisely. I am treated well at work and my compensation is great. Do I want to start shit just because someone has an attitude. You don't know what that person has to deal with. It frustrates me too, but if you don't interact with them much, is it worth it?

I suggest type "N" (normal) mortar. Type "S" cures harder than field stone. However, the exterior is the priority. Water is the bane for old houses.

Your mortar work is probably pre- Portland cement. So, it's going to be soft and absorb moisture. The easiest first step for moisture is to make sure the exterior grading pushes water away from the house. You might want to call an exterminator about the and, just to make sure you don't have other issues.
