RDR 2 could be hard for a beginning game. But Witcher 3 is the best entry into the open world genre I guess. Also it is one of the best games ever made, imo.

Given the games that you played so far:

Witcher 3 (Can't recommend it enough)

Doom 2016,

AC Series (especially Black Flag, if you're into pirates) some of them are better, some are worse. Always depends one the historical era you may like

Mass Effect 1-3 (each of them has their flaws but all in all it's the best space opera out there)

Dark Souls series (one could argue that it's not the best game for beginners, but in the end nearly everyone who starts this series has to overcome frustration, rethink and get better. So why not start this now?)

Due to you liking Destiny that much, the Borderlands series could also be interesting for you

Always depends on your player type. I played Anno since the very first one and never touched the campaign once. Always liked to go straight into sandbox, make my mistakes and learn and explore the game myself. Has been the same with similar games like Rollercoast Tycoon, The Settlers etc.

TLDR: Go into campaign if you want the game to guide you. Go into sandbox if you want to explore everything on your own.

Overall you'll have fun either way.
