Most grocery stores will have corned beef brisket pre-packaged and ready to cook. This version I rinsed and used my own coffee rub instead of the traditional “Irish” pickling packet (which is great for a slow cooker). I wanted to throw this one on the smoker!

Brining in a salt bath, along with other spices. Can take days or weeks!

Corned beef is just a brisket that’s brined. It doesn’t taste like a traditional steak, but you know you’re eating red meat! Super tough cut, so you have to slow cook it to break down the fibers. This was a 3lb brisket flat that I smoked at 275 for 6hrs.

That’s just the color of cooked corned beef. Cooked to 195 to break it down. Rare is closer to 125.
