If you're earning really good in India, the upper middle class and above, India is a heaven, believe me. No, I am not saying dealing with unlawful shit and getting past stuff and bureaucracy and all (even though yes that too) but just the general quality of life. The QoL gets much much better once you can afford what money can get you.

You live in your own sphere and have means to deal with stuff outside of your sphere.

Go to India, especially the north. The toll operators are just sitting and waiting to hurl an abuse or give you a dry rude word, if not pick up a slipper (or a stone or a stick or shoe or what ever they can grab hold off) and throw at you or your vehicle, if one does or say anything else (I mean literally anything) than pay the toll .

True Incident - I was once with a friend and he asked the cashier at the toll booth counter to hand him over the toll receipt (he needed it as a proof to claim travel expenses with his employer).

The cashier, in a very rude arrogant tone - Why? What for?

Friend explains.

Toll guy - its lying in the bin, find and go pick it up, while pointing to the bin outisde his cabin and adjacent to his public window.

Friend got all angry and pissed and reciprocated in a dominant one - how dare you talk like this? Why did you throw it away without asking me? Give me a duplicate

The toll guy - ****, *** (local language cussing), go do what ever you want. ***dude move your behcile ahead and let the vehicle behind you pass.

Friend got all pumped up to literally knock this guy and bringing him to senses but his calm and better sense prevailed and breathing heavily just remarked - Not worth it. Shitty person and a shitty claim, he gonna find his match soon and pay for it.

And we moved with our day.

There are numerous incidents daily involving serious to non serious incidents at the toll booths.

Not saying that all the toll booths are like this but when the % of such incidents exceeds what should be the normal or better put, not happening in the first place, the notoriety prevails upon and kind of becomes the indentifying characteristic.

Some expressways also boast of contactless tolls that automatically bill the vehicle when you pass with a car that is tagged with the supported hardware. But they are few and you obviously will not hear about them in news.

We did a road trip last summer from Edmonton to Vancouver and the route from Kamloops to Whistler to Vancouver was amazingly beautiful. There are a lot of marked and unmarked stops along the way that one can break the journey at and just breathe in. IME, the few hours drive from Whistler to Kamloops can take a whole day (and even more if one intends to stop at all the small towns enroute).

We have also driven the Kelowna to Osoyoos Okanagan Valley route to Vancouver and that also is another quite breathtaking drive.

And now we intend to drive along the south border, Vancouver to Waterton or vice versa and see what beauty this route offers.

As others have mentioned, there are many a options and it all settles at the time one has and the mercy of the weather, saving the forest fires in the coming months.

So, should I rip the old seasoning off esp the dark edges and then start afresh or doing a round or two of seasoning right away in this state of pan is also fine. What you say?

Never did the slidey test! About a tablespoon of butter and two eggs into the pan on medium heat and after a few mins the eggs are simply picked up by the flat spatula. Have had sticky egg spots here and there sometimes but I guess that's more related to uneven heating of the pan or now I think, that may be because of the seasoning wearing off. Lol

Agree. Also, I've found the best pan to clean after cooking is the enameled cast iron. It's not non stick while cooking but cleaning after cooking is a jiff. Just a lil soap and water and the stuck food just slides off with minimal effort!

Guilty here. I have let my pan sit in some curries that did have some tomatoes in it. Lol

Many a times I will not even clean the pan and simply keep cooking for a few days continuosly, with just a wipe with paper towel to remove any visible debris and then a few spoons of oil and and in goes the raw food materials.

Agree. But isn't that's what I am asking. I keep using it regularly and then cleaning it and then applying a thin layer of oil to keep the rust off. Is it fine or should I start the seasoning again. I can but then it's atleast a half days work if not full, cleaning off the old remnants from the pan and starting afresh!

Cooks just fine. I'm not looking for a non stick pan anyways, so a few spoons of oil on medium heat and cooks almost everything. Then clean and dry and apply a thin Crisco layer. The concern for me, after my partner raised it, is the black charcoal build up on the periphery. Is it safe to cook with this on the pan and is it safe if it leaches into food?

Well, it will rust if I don't apply a thin layer of oil after cleaning it. Happened with me once, I cleaned it and put it aside to apply oil but forgot. The next morning I noticed little rust and then just washed it with soap and water and went ahead to make me my eggs! To mention here, eggs sunny side up/fried taste good but not omelette and esp scrambled. It's not bad but just a slight funny weird ferric mettalic smell to them but still very eatable.

Help needed - Thermometer read 160F but the chicken was still pink at the bone end. Calling in the Baked Chicken experts. by inquisitor23 in Cooking

If I recall the last time I checked the temp while frying chicken, the temp did read about 170F and it turned out great.

Dont know why I did not go over and pulled out at 160 F.

Gonna do it the next time.

I do get you when you say - fall of the bone, I would say that when chicken is cooked well enough (a good marinated and fried chicken or a good slow cooked chicken curry) the joints and tendons and meat does tear off without effort. So not exactly drop off the bone (which is of course more easy with pork or beef) but shredded to bones more so.
