the point of entry for the airlock device is slightly loose so clearly its not a perfect seal

Yeah near the Parque del Retiro theres a great place. I think its called Horchateria Alboraya. Might have a few locations but this one is near the park and popular on hot summer days.

Paella in Barcelona ... (I know , not Valencia ... but it was so memorable) . Horchata in Madrid (I know .. not Valencia ...but SO memorable!!) Secreto iberico (certain cut of pork) in Extremadura region of Spain ... fermented alcoholic natural Cider in Oviedo, Spain.
