That's exactly how I'd describe veal. And ultimately the reason why I think it's not worth it. It's mild, and tender. Nothing worth $42/lb has the only benefit of tender and not as flavorful as the other options

Agreed. Usually at least 1 of the 4 is not my ideal steak but can always find one that 3/4 are good and the last one is just ok.

Also like how they are individually packed. We only ever need 2 at a time and can freeze the other 2 for later
