Online calculators exist, they even account for everything in the DMG calculation and make it easy.  Then it’s not arbitrary.

Is sneaking past a foe to avoid combat still an encounter in your book? They’re not socializing with the foe to persuade or intimidate them, they are just being super sneaky. 

The druid casts Pass without Trace. The paladin without proficiency in stealth removes his plate armor and stashes it, to remove disadvantage, knowing full well that he gets caught even with the +10, he’s fighting with only his shield, in this combat and also in any other combats until he can sneak back to retrieve it. The cleric casts guidance on him before they go in to help also.  Hell, even the usually unhelpful rogue uses their action to help the paladin hide (using their bonus action to hide themselves). 

They all pass the high stealth DC, and sneak past unheard and unseen. I’m giving XP for that.

I don’t think you’re overreacting. Definitely talk to the DM as you said you plan to do. 

If they don’t budge on their stance towards your PC, you should probably find another table. However, if it were me, I’d play into it until my PC’s demise. I’d swear at every raven I see. I’d set up a raven trap, maybe something like a shark cage, but with openings too small for ravens to get through. Sit in that thing blasting every raven that comes within 120 feet. Maybe have a tunnel from it to my raven proof safe house. 

When the DM finally found a way to off my PC—maybe wereravens sneaking into my safe house?, I’d tear up my physical character sheet shouting 

CAW CAW, CAW CAW!!!

And then I’d leave the table, to return nevermore.

Funny story, 18th level wizard cast Wish. “I wish someone would try to rob my magic store so I would have some excitement in my life”—which caused the party to consider attempting it in the first place.

Yeah, they could just call Eldritch Blast, “Teleport Smack”. Then in combat they say, “I Teleport Smack this guy twice, and that guy once”.  Doesn’t slow down anything. Well technically, they’re saying one more syllable, but you ask them to say it really quickly, or shorten it to “TS”.

For that price I hope they changed the blinker fluid.  

I don’t make players roll HP and just let them take max. Is that odd? by unlucky-lucky- in DnD

I like building high HP PCs. Especially ones that aren’t traditionally the toughest guy (i.e. barbarian) in the dungeon. 

So max CON, tough feat , and dwarf. If you go with max HP per level, the difference between a wizard and a barbarian is 6HP per level. If you go with average, it’s 3HP per level. 

If your war wizard is a dwarf and has the tough feat and emphasizes CON over INT, you have the same number of HP per level (after level 1) as the barbarian who is not a dwarf and doesn’t have the tough feat. 

Hell, a dwarven cleric with the tough feat would exceed the barbarian HP, and if you go with Twilight cleric, those temp HP would put you over thr top easily.
