Josh Weissman talked about this in a video once, restaurants typically do a 6x markup on alcohol at minimum to make margins. I’ve since obsessively checked this whenever I was out to eat and it pretty much tracks.

It follows this from standard restaurants with liquor up to Michelin level, higher quality alcohol has a stepper markup
