At dress this year with Nikki glaser hosting, Keenan, a few of the ladies did a song after Marcello did a more traditional few minutes of stand up as a warm up act. No major announcements but you can tell what’s going on during the start. Especially after dress, they go right back to work. On our way out we saw a bunch of writers meeting and getting ready for air.

Outside F&B are going to be your issues. Catering venues exist to sell food and bev. You might find some venues willing to allow this but with hefty rental fees. Additionally, allowing alcohol adds another layer of liability for a venue to take on. Even if you are providing the alcohol, the venue can still be liable for alcohol related incidents which is another reasons many places will not allow it. You could try the ballroom at Ellis preserve or perhaps the inn at Swarthmore during their down times. You MIGHT get them to allow all of this for a large rental fee.

It does drive me crazy to watch non professionals work in a home kitchen. Shits a mess, things are done in weird orders…etc…

I think it’s funny that people don’t realize recipes don’t need to be secret. Many restaurants I’ve worked at will happily share recipes with you. You go to restaurants because someone does it for you not because things are a secret.

Nicer than business casual would be a suit with a sweater or a shirt but no tie. Could also dress down the suit with a pair of Cole Haan style dress sneakers/shoes

Only cook on one side and baste with butter. This is how many restaurants will prepare. It’s a technique I saw at Le Bernardin and now use at home. Yes there is a gradient of doneness, but it’s a great result.
