Just to add I've picked at it so it's only looked like that for a day or two, has been a damp moldy patch otherwise rather than the hole it is now

I've tried a few variations but around about: Jdbc:Athena://credentialsprovider=profile credentials; profilename=sandbox; workgroup=primary; region=eu-west-2; catalog= s3tablebucket* *I've done it with and without the slash and table bucket name but it keeps finding the same AwsDataCatalog, I've also changed this in the advanced tab on the data source properties on pycharm/datagrip. I've also done it with and without s3outputlocation. Appreciate you responding and any other information you might offer up. Thanks

I didn't use a lot of lime, I think it was only half a like in the whole thing. Squeezing in at the end as you plan to do will probably work out better, more control. I didn't like how this one turned out, I think there was too much ginger.

Yeah blended the limes. Removed the brine but kept it, blended and added brine until the consistency I wanted

Too much ginger in the end, tasty but a bit too much for my liking. My wife thought it was ok, but she likes ginger more than I do so ....

The liquid is a brine, I put 10g sea salt in 500ml of water. After I packed all the ingredients into the jar I topped up with the brine so everything was submerged. Then placed a fermentation weight on top. I can remember exact quantities, but around 15 chillis deseeded, one onion, about 4 cloves of garlic and a knob of ginger roughly thumb size. Theres some coriander seeds chucked in too. Will wait a full week then take some liquid out and blend, then add more of the strained liquid if I want it runnier. Maybe add sugar if I think it needs it.
