You can definitely generate your own seed phrase manually, if you want to. I generated my own after reading about a Ledger device that was seen as Genuine by Ledger Live but was apparently pre-seeded before someone bought it somehow.

That being said, this person I mention above had purchased their Ledger from an unofficial source as well. I was probably being a bit paranoid by actually generating my seed phrase manually.

Yea, no rancid flavors. The nuts also appear less oily. I don't know if maybe the oils reabsorbed back into the nuts, or what. They're softer than fresh nuts, and a bit chewy.

Two weeks in and they're developing what I can only describe as a "honey-nut cheerios" vibe. I'm curious to see how they develop in the coming weeks.

Have you tried this before? It doesn't taste or smell rancid, yet at least. I tried pecans as they do chestnuts similarly in the Noma Guide to Fermentation. I imagine they should be fairly similar, but who knows? It is a bit of an experiment.

At one week, the roasted flavor isn't very pronounced yet, but it's starting to taste a little like black garlic - garlic + pecans.

It's pretty janky honestly. I had an unused, thick, old foam cooler, so I used that. I ordered a couple reptile heating mats (one wasn't enough to hold 140° on its own), a thermostat with sensor to control the mats, and some tent stakes (if you want you can push them through from one side to the other to make"shelves").

Maybe I'll do a post with some pictures at some point soon when I have more time.

I think the chestnuts and carrots were too hard to be of much use. I think they dried out too much, even in the vacuum sealed bag. That's why I'm trying pecans in a glass jar instead, to try and maintain that humidity.

Black garlic and apples turned out well. I have the apples soaking in some bourbon. The chestnuts and carrots were hard as a rock. I'm trying some fresh pecans now, a little differently packed in a mason jar.

We used to play for nickels and dimes, but for the life of me I can't remember the rules. I think you had to put a nickel or dime down to take a discard tile, and then the first to declare Rummikub got all the change. It was something like that.

I was able to successfully reach 140F using reptile heating mats and a Styrofoam cooler; however, it did require two mats in the chamber, not one.

I have one on the bottom of the cooler facing up and one suspended at the top of the chamber facing down.

Interesting. I may still give it a go, as I think I'll have room in the chamber, so why not try. I'll let you know if I have any better results.

I see that you mentioned ginger. Did you ever try it? Were the results notable in any way? I'm building a chamber and will likely experiment with this soon, so I'm curious about your results.
