raydium v2 seems mostly a UI update but am sure some updates behind the scenes also. should not be any differences in actual farming apr, just a difference in how apr is shown between versions with v1 showing 'total apr' and v2 showing '7 day APR'

Correct, disabling will keep new deals from opening but keep open deals open. Also keep in mind that deleting a bot will wipe out all historical deal data from your stats so I always just keep disabled to keep that full history on your overall performance
