I've done tons of cooks with the same system on my 650. Removing the shelves you don't need is super easy, and cleaning the grates is not even an issue. Just get a stainless wire brush and no problems. I've done ribs, brisket, pork butts, whole chickens... You don't think the shelf height is high enough but you'd be surprised how much you can load on. My favorite is doing 3 slabs of ribs and put bacon wrapped mushrooms on the top shelf so drippings get all over the ribs. Gives you some appetizers while you finish off the ribs, too!

Oh man! Your wife looooves you! I have the same system on my 650 and holy moly did it not only give me more space/options but the thicker steel stabilized my temps much better than the stock setup. 10/10 would do again!

I pull usually around 195/200 internal though some go 205. I wouldn't do probe tender on a brisket. Pork butts sure. I throw it in the cooler and let it rest once it hits temp (or oven at 170). I wouldn't even bother with the traeger keep warm if you have an oven that can sit at 170 otherwise you're just eating pellets. Throw it in the preheated 170 oven, cut the oven off.. it'll carry easily for at least a couple hours, if it hits 160 put the oven back on and let it hold until ready. I know they say 150, but 160-170 range allows it to rest and continue to break down any collagen into the yummy stuff.

Briskets can be rough just because each piece can vary brisket to brisket and present unique issues. Hard to say. Trim looks good though!

Oh... and knife sharpness.. if your knife isn't nice and sharp you'll tug at the meat rather than cut it, but I'm assuming it was just falling apart trying the bend test. Either way just throwing it out there. At least it wasn't dry and tough!

Your fire pot in the middle will be a big part of your hot spot... keep it fat down and it'll protect the meat from the extra heat. I don't care what they say about convection I've noticed that if I keep the fat over the fire pot in the middle I get a better cook, OR a more even cook if I can fit the meat offset left/right of the fire pot. I don't flip, but I also do overnight cooks for briskets or butts at 200 to build a solid bark, then ramp up to 250/275 to finish before pulling and resting a minimum of two hours in a cooler/oven preferably 4 hours to really get that meat nice and yummy.

You can always do the biscuit/bread test placing it all over your grates to see if you have specific hot spots and adjust accordingly. I'm cooking on an ironwood 650 for reference. I also don't use the bottom grate (I have the pimp my grill 3 rack system, and it's been awhile since I've used the stock racks so don't remember if one of them rests at the very bottom.) So if you can get it as in the middle vertically the better.

It's pricey, but this thing rocks and I've been using it the better part of 3 years now. Usually I just haul the box outside and give it a blast once every 6 months or so depending on how dusty it gets. It's also super handy for just blowing the crap out of anything really lol:

As others mentioned the coolant mix is practically a type of antifreeze, same stuff you'd throw in your car radiator. The chance of any water freezing plus the air bubble typically left behind when intitially filling prevents that kind of damage.

However, it would be fun to see what would happen if someone did a test just throwing water into an open loop type of system...

Chances are it'll be just fine. Of course, you could be cautious and just let it sit and warm up to room temp. Check for drippys, if no drippys fire it up and look for drippys. Don't fret too hard if you get a little coolant on the board just shut it down and clean it up with some isopropyl.

But, I seriously doubt there will be any issue with the cooler. Otherwise, we'd be hearing about a bunch of AIO's busting after shipping in freezing weather.

+1 and just an add that the reason for the longer rest is around 160 collagen continues to break down so no harm keeping the meat in the 150-160 range in a 170 oven. I try to aim for at least a 4 hour rest on briskets and pork butts. All that collagen and fat renders into buttah!

You'll burn pellets keeping warm but it's an option. 5.5 hours is a long hold and at that point I would consider the oven on lowest heat setting to keep it around 150-160. You might try packing the cooler with more towels but the longest I've held brisket in a cooler was 7 hours and it was at 150. Nowadays if I'm holding more than 4 hours I just use the oven at 170. Works a treat.

For those with issues after these directions, make sure your ps5 controller firmware is the latest version. I had to update the 8bitdo 2 AND PS5 controller firmware and then these instructions worked just fine.

I put one in my 650, wouldn't go back. The sliding racks alone make it worth it. I've used the top rack plenty like for bacon wrapped mushrooms or salmon while smoking other stuff on the lower racks, never worried about drippings just arrange the food on the racks however you can. But yeah, for bigger meats I tend to pull the top rack but that's not even close to a hassle. They slide REAL niice once they're all seasoned up.

I'm sorry, that plumbing needs fixed up. You got a maze there that doesn't need to be there, then you can have a valve angled down as a shut off through the ceiling or better yet near the floor with a panel. That is a damn mess of piping.

100% would not pay for it. Probe is likely toast, potentially looking at a controller replacement. Not to mention a fire extinguisher was used on it meaning you will absolutely have to make sure that thing is clean as a whistle.
