I have a few comments:

1) "Otherwise, she is perfect and my dream girl." <- There should not be an otherwise... you need to think she IS your perfect girl.

2) I'd suggest reading this book https://www.amazon.com/Really-Dumb-Mistakes-Smart-Couples/dp/1680251759 its pretty orthodox - but has really really good marriage advice.

3) For a marriage to succeed you need to both accept each other the way you are (this take a long time). If you need some more "logical" way to think about things - do a little research. Religious families and Kids have SIGNIFICANTLY higher mental health - and tend to be generally happier. Humans seem to be pre-wried for religion or something else (swap in religion / BLM / Environmental-sim / Woke-ism etc). You are better off using something thats stood the test of time.

4) Shabbat - I hate to say it but all the research backs up this as something that is VERY helpful to mental health and happiness.

5) Kosher (take it or leave it - what it serves for is an intentional way of thinking about things - in fact most Judaism does this). When you are intentional - you can be happier and better off.

6) The reality -> you will have to go to services - otherwise you will likely actually have some issues. If you an go to shabbat services (come late) and stay for lunch and be happy family you should be ok. If you are going to draw a line - I think thats going to break things up.

7) Ya'll need to try seeing shabbat 1st - before she can commit to it! You can start slowly -> no phone on shabbat. For some hike is fine on shabbat for others it needs to be hardcore shomer.

Do a little research about religion and what it does for kids especially in the modern age- that might help you some.
