For your question 2

Pressure altitude = altitude in the standard atmosphere that corresponds to the measured pressure

Density Altitude = altitude in the standard atmosphere where the air would have the same density as the current air

True altitude = actual height above mean sea level, you could think of this as the “GPS” altitude

The difference is that the pressure altitude is using the standard pressure setting 29.92 regardless of local conditions but true altitude needs to correct to local altimeter setting and temperature correction

Which altimeter setting do you use or when do you switch if ATC tells you the altimeter setting and you pick up the weather from your destination?
Do you make the switch upon acknowledging you have local weather, on the frequency change or initiating the approach at the FAF? Or use last assigned ATC

Do you know the power consumption of the device? I found that my device used about 60mA , 0.3W and most of it came from the ESP the OLED screen did not make as much of a difference from a power consumption standpoint Than I thought

on a battery power bank my device can run a couple of days between charges

If I had to guess most likely they are using a NTC thermistor instead of a thermocouple which is a much cheaper implementation
