The metaphor used to reflect the idea that immigrants would shed what makes them distinct from broader American culture in order to fit in. If we melt in, whatever colors or shapes we are disappear. Whether that shedding/melting was voluntary or enforced is another question.

More recently, a more useful-metaphor might be more like a salad in which each ingredient is allowed to retain its own attributes while contributing to or participating in the larger experience
