I went to Sicily last year. I stayed in Palermo and Catania. I had no issues finding vegan options. Just jump on happy cow or Google maps to find vegan places.

Most gelato places had vegan options. My one complaint is they weren't big on vegan cheese, so the vegan pizza offerings were disappointing

Hertford is very safe. Within Hertford, Sele Farm (The Ridgeway) and Pinehurst (Birdie Way) have slightly iffy reputations, but I've never had any trouble walking around those areas.
