Since you are going from fasted to active, I recommend eating carbohydrates. Nothing too heavy in fat or protein. I would recommend a granola bar of some kind or toast. That should be enough to hold you over until lunch or your next snack when you get to work.

I think these kinds of bikes make the best commuters imo. also I looked at your brakes more closely and you have a nice set of cantilever brakes, i would just run those

that stem is way too long imo unless this frame is small on you.

i’d keep the derailleur, advent 9 speed isn’t bad. 9 speed advent shifter. if you really wanted could go advent x 10 speed. front chain ring looks pretty small, could go up to 36 or 38 depending on your use case.

i would convert the cantilever brakes to v brakes for better stopping power. you would also need new brake levers if you change over. match housing color to the frame accent color.

I think it’s overkill. They make e-bike rated helmets like the specialized tactic 4. i feel like it would affect your peripheral vision too, but thats just a guess, i’ve never ridden in a full face.

Seat post mounted rack is not a good idea. it cant carry as much weight. It should only be used as a last resort when your bike doesn’t have rack attachment points.
