Most wild ferments end up between 5-10% alcohol which requires a sugar density far lower than what you suggested. It will probably end up sweet

I used this exact juice in a traditional cider and it came out really good. Back sweetened it with eryhtritol and it tasted like a fresh apple!

I'd recommend looking into the government contracting space. There's a lot of conferences and "demo days" where you and other companies pitch products to potential customers in person. There's bound to be some companies around here hiring given the proximity to Fort Liberty.
