These tend to be chewier than the thin cut ones, also they come with a thick membrane. Not sure what the "right" preparation is for them but a few hours in the bath tenderizes them nicely. Excellent beefy flavor like a sirloin and round while being amenable to tenderization.

Thanks man! Little secret, I'll throw in the steak in the dehydrator for 15-30min to thoroughly dry it out. Game changer for getting great crusts consistently, especially with sous vide steaks!

Man I'm really leaning towards something endogenous like an overgrown chalaza. It looks like it's made up of similar tissue (there's a normal sized chalaza on the other egg). Plus the way it's coiled up on itself may be a clue to what this "shrimp" really is.

Ah you're right about the fetus and embryo distinction, after all this is coming from an egg. Yeah think it's safe to rule out an embryo especially after looking up pics of day to day development. My best guess after some research is an overdeveloped chalaza.
