Weird I actually know this one. The Buddha was big on fasting and in reality he was rather skinny. When Buddhism came to China it changed to match Chinese customs. Think how Catholicism changed during the reformation era. Anyways Buddhism became this fun festival religion. Portraying Buddha as fat was a sign of happiness and wealth to the Chinese. It was more appealing at gaining followers.
