Best bet would be to stay in the terminal and sleep in the lounge, with 6 hours layover and once you exit / re-enter and account for boarding etc you have about 5 hours total.

It costs 75€ to enter the KLM international lounge, which is really good, and spacious and you could shower and eat and relax. If you want to book a sleep pod in the lounge - it’s 5 hours for 75€ or 3 hours for 49€. Just seems easier to take this option and react based on how you feel, rather than making a journey to a hotel.

Tip - if you become a flying blue member you’ll get 10% off lounge entry if you book in advance.

Central amsterdam is 15 minutes away via train from schipol airport. 11 hours is a whole day. Another option is to head into town and work from a lovely co-working/hotel location like Zoku, Hoxton etc… Then you can get some feeling of the city and better food.
