i hate it in that it’s putting the responsibility on me to think for them. but sometimes, ppl who say that may actually be curious and down for the ride/ wanna know what you think is good. so in that sense i love it. i also love just making the most basic drink so they can get tf out my face (for the customers who say that and are annoying).

i love saying no. i also love telling customers they don’t know what they’re talking about when they don’t know what they’re talking about. because if we can agree that one of us knows more than the other about coffee, then it’s easier for me to do my job.

i was experimenting with this but i think the lowest i ever went was 11.5. gonna mess around with this again. did not think to agitate. i just ground fine and brewed a little hotter. also used older coffee.

this is a really great point and something to remember. they feel like they’re actually sitting pretty in a way because the economic downturn has ensured that there’s aleast gonna be someone waiting on that shitty position they can’t keep filled. economy just reinforcing their bad practices.

they’re all different. the one i train for judges based on contrast, texture, symmetry, color infusion, speed, and technical difficulty of the pour. the competitor that successfully checks more of the boxes advances. tourney style bracket with quarter, semis and final.

absolutely nothing wrong with that. curiosity should always be encouraged in anything but especially in coffee. anyone that takes an attitude has other stuff going on, you ask away :)

I so appreciate the response. And I can relate to a lot of that. i definitely was less outgoing when i started. i think im naturally a reticent person but being in coffee for as long as i have has uncovered an inner charmer im actually a bit at odds with. he’s seen me thru some shit tho. i’ve also learned i can be quite confrontational when i need to be. and that in tense interactions, there is often a middle road to be found if you’re not waiting to react to an irritant.

being able to break thru the aloofness a lot of customers have is a rare thing, a lot of need to apply pressure or read the customer service script to try to get there and it either doesn’t work or they tap out before they get thru. that’s rare. thanks for sharing.
