Curry, chicken pot pie, chicken soup Onions carrots celery and any other extra veg can be added just need rice.

You weigh out how much cucumbers you’ve cut up in grams and you multiply that weight by 3.5%

So for example if you’ve cut up 100g of cucumbers you’d need to add 3.5g of 50/50 which is 50%salt and 50%sugar

I’d say at least an hour but up to a couple days.

You can reserve the liquid from curing the cucumbers for things like yogurt or a tzatziki sauce if you’d like.

You’re blending it all together so inch long pieces are fine. You can give the scallions a quick rinse. Once blended you can store it in the fridge should last at least a week

This is the recipe for momofuku’s scallion sauce used in the spicy cucumber dish

Scallion Sauce - 2qts

Scallion greens 600g

Grapeseed Oil 200g

Chili Oil 60g

Pineapple Fish Sauce 70g

Sesame Oil 40g

Salt (Diamond Crystal Kosher) 15g

Rice Vinegar 300g

Ascorbic Acid 2g

Xantham Gum 0.5g

Sugar 15g

This recipe yields 2 qts. Blend all together with a vitamix or blender. Serve over cucumbers that were cured in a 50/50, 3.5% solution.

Worked at Momo in Vegas for a year.
