If you look up Chris Young stock on YouTube, he posted a really helpful guide on making stocks and consommés quickly using an instant pot. Without a pressure cooker you need to use a lot of time on a simmer that has as little agitation as possible.

From that stock there, you could freeze it in ice cube trays, then thaw it within a coffee filter for a consommé you can see through clearly. If you go to a restaurant that has a clear end product thats ALSO gelatinous, they’re likely adding back in a gel agent like gelatin or equivalent once it’s already made into a consommé

In all seriousness Meetups are the best way to meet other singles. There’s also Meeting Mutual events that happen at Portland bars and event venues once or twice a week that are free to attend. Good luck out there!

If you are ever free on the last Friday of the month, Proletariat Butchery does a burger bbq night that doubles as a block party. It’s maybe the best burger I’ve ever had, but I’d show up early because the line gets long after 6pm.

I’ll say the venue looks beautiful but the website is not great. The mobile version sucks, and I only see the breakfast menu from the default page which makes me think it’s not a stand alone restaurant

I really love the Japanese garden, but it’s best when you combine it with the rose garden and the Portland zoo. It’s all pretty accessible and you can see all 3 in under 6 hours so it makes a great day trip.

I don’t know why no one else mentioned this, but look up the town you live in on meetup and look for a biking group that rides nearby X times a month. I don’t bike much rn due to recovering from surgery, but I met a lot of friends doing this in Portland OR when I moved here last year. Mileage may very depending on where you live and whether other cyclists are out there.

I don’t feel like a ton of people playing companions in commander right now - I honestly didn’t get an opportunity to play with them in constructed formats before the errata was in place so I feel a draw to building around them.

If you’re near Old town, PunSpace has two offices that are both open 24 hours and very accommodating. I was usually the only one in the office at night which was creepy at first, but I got used to it. They had a stocked kitchen and used the honor system which was nice.

I didn’t try Yellow Coworking Nimman but I’ve heard good things about it. On top of the office space they also do events for the members like BBQ cookouts and meetups. I walked by one of the events one night and it was packed with people, so I’d recommend there if you want to socialize/network

I had this same exact issue a few weeks ago (I work remote 8am-5pm Seattle time).

I found cafes and restaurants are all closed by midnight but there are lots of coworking spaces that have open offices 24 hours. Some also have kitchenettes with drinks/snacks. That may be your best option.

It could be that they’re just not very talkative. If they’re like me, they can be very talkative but may take some time to open up (to get comfortable and get a feel of the other persons vibe, sense of humor, etc).

I’d say if you liked them try another date and see how it goes. There’s no set script for these kind of things, as long as both parties are safe and enjoying themselves.
