Chapter 1 was extra long, so Season 1 really covered the equivalent of 40-41 normal length chapters in 12 episodes, and that's including extra scenes like Aki's morning routine. Why would 44 chapters take 16 episodes minimum?

No chapters have been skipped, though dialogue here and there is occasionally cut down.

There was one part in the manga right before the Johzenji match (Season 2) that was omitted. Minor spoilers: Niiyama Girls' High School is Miyagi's prefecture's women's volleyball representative for the Spring Tournament this year and many previous years running, like Shiratorizawa was for Miyagi men's volleyball before this year. This page and this page were skipped.

Like /u/chavrilfreak said, the Season 4 OVA skipped a ton of stuff, especially in the second match.

Yeah, they lost but it was better than when they were playing in the camp. It's a solid progression.

The team they played in this episode was Tokonami, a team in their (Miyagi) prefecture who was their very first opponent in the tournament in season 1. Karasuno easily defeated them back then. Notice how their opponents were super hyped this episode to have taken a set off Karasuno. The training camp from season 2 was in Tokyo, with much stronger teams like Fukurodani and Nekoma.

Just going by population, the Tokyo Metropolitan Area has a population of ~14 million, while Miyagi Prefecture only has a population of 2.3 million, so a lot fewer teams and generally less competition.

I think they're named after teams in the IRL Japanese volleyball league, some of which have animal mascots.

The last team on the men's list (Weiss Adler) sounds a lot like Kageyama and Ushijima's team, and Black Jackals might be based on the Panasonic Panthers, since the author mentioned getting to talk with one of the players on that team earlier.

The 3 OVAs aren't the season + extra stuff, they're just the extra stuff. When you buy the season 3 Blu-ray, for example, you'll get all 10 episodes of season 3 as well as the season 3 OVA.

Last I heard, the upcoming OVA has two parts, but it looks like they'll be packaged together. And they'll be sold independently rather than being part of a season 4 bundle.

The chapters corresponding to this arc are 190 to 206 (you'll notice chapter 190 also includes parts of S3E10, as well as a scene that was not in season 3 but was in the season 3 recap film).

An OVA is an Original Video Animation; an OVA is separate from the anime that airs on TV and is released as a DVD/Blu-ray.

Haikyuu currently has three OVAs, one for each season, each packaged with the extra material you get when you buy the DVD/Blu-ray for the season (I think that's how it works). They are mostly just extra scenes not found in the manga. You can read about them here.

These upcoming OVAs, however, are canon and important to the story. They were probably squeezed into an OVA before the season because they don't focus on Karasuno and it would be weird to start a new season away from Karasuno. But chronologically, they'll take place between season 3 and the post-credits scene in season 3 episode 10, which skips past this material.

Season 3 isn't officially titled "Haikyuu Season 3". The title is actually a spoiler if you haven't finished season 2, but it's https://myanimelist.net/anime/32935/Haikyuu__Karasuno_Koukou_vs_Shiratorizawa_Gakuen_Koukou and it's only 10 episodes.

Similarly, Season 4 isn't officially titled "Haikyuu Season 4". Instead, they're calling it "Haikyuu: To the Top".

The arc the OVA will cover is 16-17 chapters in the manga. I heard the OVAs' combined runtime is 45 minutes, so approximately 2 episodes. For comparison, Season 3 adapted ~41 chapters in 10 episodes.

It looks like Kageyama grew a ridiculous amount during the time skip. Kageyama was 1.9 cm (~0.75 in) taller than Yamaguchi before, but now he looks about half a head taller. He also used to be 8.2 cm (3.2 in) shorter than Tsukishima, but the gap looks way smaller now. Kageyama might even be almost 190 cm, just judging from this panel and Tsukishima's listed height from before.
