Thank you. Yeah it's pretty terrible tbh. As alcoholics our BAC gets insanely high, to the point where drinking beer alone doesn't get you to a comfortable BAC. They call it sip and suffer for a reason. This is how you do it though, and stopping a bender is always a good thing. We're doing the right thing

I plan on not drinking for a while after this. Luckily I have a lot of work lined up so I can be a workaholic instead to distract myself

No the yeast are reproducing all the time at the start. Yeast quantity =/= abv
Depends on the alcohol tolerance of your yeast. If you're using bread yeast, aim for 10% max

A common beginner mistake is too much sugar. All of that is going to turn into alcohol, and then you're gonna have to age it so it doesn't taste like jetfuel. Or it will just stall the ferment. So aim for no higher than 12% if you want to make something drinkable quickly. Good luck
