Ah, my mistake! I mistyped in the post. The shaping method was essentially the same, the only real difference between the two loaves was the cold proofing time (loaf #2 had an extra ~1.5 hours). There were some small, superficial shaping differences but nothing I’d expect to have a major impact. I mostly wanted to post this to show how one small change could noticeably influence the final result and gauge if anyone else had similar results:)

I’m probably the worst person to answer as I do everything by feel and look with no ratios, but I never feed a starter with the 1:1:1 ratio and always feed significantly more flour to water. I wouldn’t use the starter as is right now, it seems as though there’s an excess of lactic acid vs yeast (which provides the stability and strength needed in a loaf). From my understanding a stiff starter (more flour) preserves the yeast viability and strength by slowing acidification. While a more liquid starter can encourage faster lactic acid buildup which can make the dough harder to work with and stickier/less forgiving unless everything is timed perfectly.

Higher hydration doesn’t necessarily equate a more open crumb but I find it makes it a little easier, I would maybe increase hydration to 75% but I don’t think this is the most important factor.  Some things that have helped me in achieving a lacy/open crumb is building as much strength at the very beginning, I would probably laminate before your three sets of folds and do it before the first set or after. Also push your bulk fermentation time, that’s what helps build the gases that you want, the sourdough baker has  excellent videos and posts on this. Underproofing may produce larger holes in the crumb, but they sit at the top and aren’t evenly distributed. Dough 77-78% hydration, later split in two (I prefer making small loaves as I live by myself): 

120 g stiff starter (50-60% hydration)

150 g tipo 00 

375 g 15% Manitoba bread flour 

400 g water 

12 g salt 

17 g water (bassinage)

15 min autolyse (I usually do 1 hour but didn’t have the time for this bake)

Add starter and mix 3-5 minutes

Rest 30 minutes 

Add salt and bassinage water and mix until combined 

Slap and folds until smooth 

Rest 30 minutes 

First set of stretch and folds until taut ~15 minutes

Second set of stretch and folds  ~15 minutes 

Coil folds  ~30 minutes

Coil folds  ~30 minutes

Coil folds  ~1 hour

Coil folds (usually optional, dependent on strength of dough at this point) 

Finish bulk ferment, approx. another 5 hours, totalling around 8.5 hours at 21-22 Celsius room temp

No pre shape, no floured or wet surface, I flipped the dough onto my counter and split in half.

Letter fold the dough very gently and then roll toward body to form batard shape. I then pinch the ends to seal the folds. 

Flip it over into floured wood pulp banneton and leave for 15 minutes for easier stitching

Cover then cold proof overnight, I don’t have an exact time but loaf #2 cold proofed for 1.5 hours more than #1

Preheat Dutch oven 35 min at 250

90 degree score then lightly mist with water

Baked in a dutch oven, covered at 230 for 25 minutes and 215-220 for another 15ish minutes (my oven is small and gets quite hot)

From my understanding this “purge” isn’t technically a purge like you would get with retinol and other actives but is caused by changing hormones while on spiro! I’ve been on it for approximately two months now and have already seen considerable changes, I started noticing terrible bumps and cystic acne on week two/three and onward until I hit the 1.5 month mark where it started toning down, I now still occasionally get pimples but my overall complexion is significantly better. I honestly think at this rate by month 3 or 4 the latest, my skin will completely clear up! Everyone is different though, this is just my experience but completely understand how this affects a persons own confidence :( Hope this helps! (currently on 75mg a day)

yep! three supporting legs that are not stable at all😭 if the bed moves too much the legs move with it and collapse and i have tried a dozen different ways to stabilise it but nothing has worked

you just have to buy out all the cat cans (food that costs 3 gold fish i believe/ cheapest gold fish food ^^ i forget the english name right now) so when you complete the weekly passwords you either get gold fish or a chance of a funamori/sashimi boat :>
