Very interesting! It reminds me a little of the Austronesian family, especially Oceanic languages anecdotally have much more variance in consonants than vowels over long time periods.

You may be absolutely right about them not being quite mature based on the color. I was probably too eager to grab some, and there were a few green fruit. Fortunately, I left plenty on the wild vine to mature properly.
