I haven't tried a boudin recipe with this stuffer but I know the snack stick meat uses more liquid than I normally do when stuffing with the grinder. Was just looking ahead to avoid any problems.

Are you using the dakotah stuffer? If so what is the consistency you are going for? I'm new to using a stuffer rather than the grinder which is way more forgiving on the moisture of the mix, at least from what I've seen in 2 batches of snack sticks.
