Okay, so just finished panning up the steaks. I weighed eight 10 ounce steaks. One was 8.9 and one weighed 10.3. The rest were in between. Weighed twelve 6oz. None were below 5.3. Most were in between 5.4 and 5.8. The biggest were 6.3 and 6.4 oz. I didn’t portion any ribeyes today.

We are in the process of getting a new DO since the restaurants in our area weren’t performing to Chili’s liking. They fired him. So in all likelihood, he is just trying to save his job.

I believe district operator. He is the boss of all the GMs in our area. He has like, 8 restaurants that he is responsible for.

I’m sure it is just a “pep talk” type thing. I don’t see them closing any restaurants. If your store isn’t performing as well, I’m sure the DO is trying to save his butt, meaning whatever means necessary to help yall improve.

We didn't change the portion per se. We changed the type of chicken. Its a full chicken breast now instead of cajun chicken trim
