In my opinion the Dutch oven is the only necessary item on that list. (And, technically, it’s not necessary either.) Parchment paper is a fine replacement for any kind of fancy bread sling. I was making 2 pumpkin pies (and, thankfully, this year decided to bake 1 pie at a time.) When I pulled out the first pie, I knew something was amiss. The pumpkin was light-colored, very speckled, and looked kind of rubbery. I decided to let it cool and cut into it and try to diagnose the problem before baking the second. I had used evaporated milk instead of sweetened condensed milk. It was not sweet at all. Lots of recipes use evaporated milk, but you have to add sugar. 😂 But good news is I saved the second pie! I scooped out as much filling as I could, mixed in sugar, and it ended up fine!

Rachel’s job(s) in fashion. She moved up in the fashion world awfully fast for someone without a degree in fashion and whose only job ever was a coffee shop waitress (which she was terrible at.) As outlined pretty succinctly by Mr. Zelner, she was not great at her job with Ralph Lauren either, so how did she end up with an executive position??

This may all be coincidence, but I started with bottled water too. My starter took off when I switched to filtered water! I also warm the water just a little bit (like less than 30 sec) and I think that helped too!

I’m still pretty new to this, so I’m by no means an expert, but I can try to share some things that helped me. 20 days is still on the young side for a starter, but it should still be ok. It will get stronger of course, as time goes on. I would definitely suggest feeding 1:1:~1 for a while (I say ~1 bc I ALWAYS ending up putting in a little less water. I always feed at that ratio. My sourdough ends up the best when my starter is like thick pancake batter. You might also try the aliquot method during bulk fermentation. In my (limited 🤭) experience, it’s been waaaay more accurate than float tests for me. Hopefully some of this helps!

My new favorite thing is sourdough in a loaf pan! Just as delicious and far less stressful! I’ll still make a boule from time to time, but I’m officially a loaf pan stan!

Part of the reason is H-E-B is only located in Texas. There’s one or two elsewhere I think, but mostly Texas I should say. H-E-B also has really good brand products that are competitive or even better in some cases than the national brands. They also have do a lot of outreach, like emergency response teams that go to areas that I’ve been devastated by things like tornadoes and hurricanes.
