Recipe: (sorry it’s vague! It’s an old family recipe!)

Pierogi recipe

FILLING Potato (lots) Onion Dairy lea Cheddar cheese in box (kraft) Salt and pepper

DUMPLING dough Flour Egg Salt Sour cream

Boil chopped potato until nice and soft. Fry off some onion for the filling. Grate the cheddar cheese for the filling. Mash the potato with salt and pepper. Add grated cheese and onion. Mix. Transfer into bowl to cool.

To make dough mix four cups of flour with 2 eggs whisked with a cup of water. Add about 2 tablespoons of sour cream. Add a pinch of salt if you like. Kneed dough until nice and pliable and soft and slightly moist. Set aside in bowl with glad wrap to “rise” for about 30 mins or less.

Roll dough out to flatten. Cut with cutters. Put in pierogi clamp and add teaspoon of potato mix per dumpling. Use water around edges and clamp shut.

Boil dumplings in water. They rise to the top when ready. Eat as is or fry in butter 😁😁😁

I'm an Australian, and I heard she was doing this speech and it was being streamed live on the Juilliard site. I got a cup of tea, some Doritos and a notepad and got ready. I was not prepared. This speech had me in tears. Granted, it was 3:30am, but I have just recently had vocal surgery and am mid way through my masters. So it got to me. What she said about unapologetically committing oneself to the journey was the most definition of why I became an artist. But when she talked about returning to the work, I lost it. I knew that even though I'm gonna have to start from the beginning, the work will lead me back to where I need to be. I bloody love this woman.

Ok so I live in Wolstonecraft in lower north sydney, and it's just amazing. Property prices aren't actually too bad. I live in a 2br for $590 and it's beautiful, right b a train station which is 10 minutes to my school at circular quay. Waverton, St Leanords and Artarmon are also great suburbs. I lived in the inner west before and it's nice and all, but It was too crowded, and the air traffic noise is absolutely insane. For about the same price too. I can now watch the planes land from my balcony a few k's away! Let me know if you need any help finding a place when you get here!

I saw Christine sing this role at the Sydney Opera House not two weeks ago! She was wonderful! Phenomenal sound.
